Bright straw yellow in colour with striking golden highlights, this wine offers an intense and broad aromatic bouquet. On the nose, aromas range from white-fleshed fruit to mango, from pineapple to white flowers, lavender, broom and Mediterranean herbs, with a touch of walnut husk. The palate is soft and juicy, but at the same time well balanced by freshness and savouriness. The prolonged aftertaste is enriched by notes of bergamot and a light spiciness of white pepper.
Taste: dry and medium soft, harmonious, fine, persistent
goes well with fresh seafood dishes and sushi. Try it with prawns, squid, clams or other seafood prepared in light ways.
The acidity and freshness of the wine can perfectly balance light and fresh salads.
Cheeses such as buffalo mozzarella, cream cheeses or goat’s cheese can be excellent companions, complementing the freshness and aromatic note of the wine.

Avocetta is an elegant migratory bird who nests and winters by the Cillarese Lake, 350 meters away from our vineyards.
This bird gives his name to our white wine, it is made of Minutolo grapes, a variety that has been cultivated in Apulia since 1200 and recently re-discovered. Avocetta wine has a flavor of floral and yellow pulp fruit, aromatic herbal notes. It matches perfectly with shellfish, fish main courses and vegetables.
